Ingredient-
- 4 large Portobello mushrooms
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
- Salt and black pepper, to taste
- Optional toppings: sliced tomatoes, fresh basil, mozzarella cheese
Instructions–
Make Your Marinade -In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic cloves, dried or fresh thyme leaves (optional), salt, and black pepper until evenly mixed This will serve as your marinade!
Clean the Portabello mushrooms-Use a damp paper towel or mushroom brush to gently cleanse Portabello mushrooms of any dirt or debris, while avoiding washing under running water because this could expose too much moisture for them to absorb.
Remove Mushroom Stems-Carefully cut or twist off any tough mushroom stems to save them for another recipe, or simply discard.
Marinate Mushrooms– Begin by placing cleaned mushrooms gill-side up in a shallow dish. Pour the marinade over them evenly, using a pastry brush if necessary to spread out evenly across their surface.
Let Them Marinate-Cover the dish with plastic wrap or a lid and place it in the fridge for at least 30 minutes, but up to two hours will enhance flavor!

Portobellos on the Grill– We Carefully place marinated mushrooms gill-side down onto your grill, and grill for approximately four to five minutes per side or until tender and lightly charred – basting with more marinade while grilling is optional!
