Chettinad mutton Kulambu recipe
I’m up with a special curry from chettinad, I love their cuisine, they are spicy, flavorful, full of freshly grated masala and spice powder.
No pre-ground spice powder is allowed in the kitchen. Where is that fat. This curry is a perfect example of that. It has tons and tons of flavor wrapped up. Just try this and tell me how it went for you.
Chettinad Masala powder recipe
This is the recipe for chettinad masala powder or chettinad spice mixture. You can double or make a large portion of the spice mixture and store in your pantry.
Dry red chili – 6 to 8 or to taste Whole coriander seeds / Mullu Malli – 4 tbsp Cinnamon stick / Pattai – 5 cm stick Fennel seeds / Sombu / Saunf – 1 tbsp whole peppercorns – 1 tbsp Cumin / Jeerakam – 1 tsp Cardamom pods / Elakai – 5 Star anise – 1
How to make Chettinad mutton Kulambu
Grind coconut and fennel seeds to an even mass by adding a little water. Set aside until use.
Warm up and kadai. Roast all the spices until golden. Take them out in a blender and make them into a fine powder. Set aside until use.
Heat oil in the same kadai or a pressure cooker. Add the whole spice and let them simmer for min.
Add shallots, green chili and curry leaves. Saute until light golden.
Now add the ginger-garlic paste and sauté for a few minutes. Add salt and turmeric powder and mix well.
Add the tomatoes and sauté them until they are completely soaked.

If you are now doing this in a pressure cooker, cover it and cook for 5 whistles for 7 whistles. Turn off the heat and let the pressure go all by itself.
Now open the stove and add coconut masala, more water if necessary and mix well.
Cover and simmer for 15 to 20 minutes until the oil separates from the top.
Add coriander leaves and mix well.
Serve this curry over rice or roti.
