Caramel fruitcake recipe

I have made different versions of fruitcakes for each year. I was thinking about what I was going to do this year. Remembered the cake as I saw it on the guy’s blog. And I’ve been waiting to make that cake for a long time. Finally I made it a few days ago and it was delicious.

How to make caramel for cake

The cake is so simple to make and the taste of the dark caramel just flows through the cake which I love. I hope you will try this and enjoy your vacation. The main taste and color of the cake comes from the caramel that we add. It’s easy to make. But be careful not to burn the caramel.

Now take sugar in a saucepan and cook it over medium-high heat until it gets a golden color. Do not stir in the caramel, just turn the pan around. When the caramel reaches the nice color, add water and mix well. Set aside to cool.

How to make caramel cake

  • Two days before soaking all your dried fruits and nuts in rum, you can also soak them in orange juice.
  • On the day of baking. Start by preheating the oven to 180 degrees C. Grease an 8 inch round cake tin with oil and sprinkle it with flour. Set aside.
  • Take the dried fruits and add two tablespoons of flour. Turn well and set aside.
  • Now take flour, baking powder and baking soda in a sieve and sift it well. Set aside.
  • Now take sugar in a saucepan and cook it over medium-high heat until it gets a golden color. Do not stir in the caramel, just turn the pan around. Now that the caramel reaches the nice color, add water and mix well. Set aside to cool.
  • Now separate the egg, take the egg white in a large bowl and beat it stiff with an electric whisk.
  • Put butter, sugar and vanilla in a bowl and whip until creamy. Add egg yolks and whip again.
  • Now add half of the flour and carefully turn it over. Add the cooled caramel and mix well. Now add the rest of the flour and carefully turn it over.
  • Finally add a third of the egg white and turn it well together. Then add the last egg whites and fold very carefully until nice and fluffy.
  • Finally add the floured nuts and dried fruits and turn well.
  • Pour this into the cake tin and bake for 1 hour or insert a toothpick to check if the cake is done.
  • Remove it and cool completely.
  • Now cut into slices and serve
